    Infuse the Milk

    In a medium saucepan, combine the whole milk, heavy cream, and grated ginger. Heat over medium heat until just simmering, then remove from heat and let steep for 30 minutes.

    Mix Egg Yolks and Sugar

    In a bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until pale and thick.

    Combine and Cook

    Strain the ginger-infused milk mixture to remove ginger pieces. Gradually whisk the warm milk into the egg yolk mixture. Pour the combined mixture back into the saucepan. Cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 5-10 minutes.

    Cool and Add Vanilla

    Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.

    Churn the Gelato

    Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze and Serve

    Transfer the gelato to an airtight container and freeze for at least 2 hours until firm. Serve as desired.
