Prepare the Ginger Infusion
In a saucepan, combine the grated ginger, whole milk, and heavy cream. Heat over medium heat until it starts to steam, but do not let it boil. Remove from heat and let it steep for about 30 minutes.

Whisk the Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until it becomes pale and creamy.

Cook the Mixture
Pour the combined mixture back into the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon. This should take about 8-10 minutes.

Cool and Add Vanilla
Remove from heat and let the mixture cool to room temperature. Stir in the vanilla extract.

Chill
Cover the mixture and refrigerate for at least 4 hours, or overnight, until completely chilled.

Churn the Gelato
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
