Prepare the Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels. Season them with salt and black pepper.

Dredge the Crabs
In a shallow dish, add the all-purpose flour. Dredge each crab in the flour, shaking off the excess.

Fry the Crabs
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the crabs to the skillet and fry for about 3-4 minutes on each side until golden brown and crispy. Remove and set aside.

Prepare the Sauce
In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped red bell pepper and green onions, cooking until soft.

Add Liquids
Pour in the dry white wine and bring to a simmer. Let it reduce for about 3-4 minutes, then stir in the capers and unsalted butter. Cook until the butter melts and the sauce thickens slightly.

Combine
Return the fried soft shell crabs to the skillet, gently coating them with the sauce. Cook for an additional 1-2 minutes to heat through.

Plate the crabs and drizzle with the garlic-white wine butter sauce. Garnish with extra green onions if desired.
