    Prepare the Polenta

    In a large saucepan, bring 4 cups of water to a boil. Stir in the salt and gradually whisk in the polenta. Reduce the heat to low and cook, stirring frequently, until the polenta thickens, about 15-20 minutes.

    Set the Polenta

    Once thickened, pour the polenta into a greased baking dish and spread it out evenly. Allow it to cool and set for at least 30 minutes.

    Prepare the Mushrooms

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and cook until they begin to release moisture, about 5 minutes. Stir in the chopped rosemary and honey, then season with black pepper. Cook for an additional 5-7 minutes until the mushrooms are tender and caramelized.

    Fry the Polenta

    Once the polenta has set, cut it into squares or triangles. In the same skillet, add more olive oil and heat over medium-high heat. Fry the polenta pieces until golden brown and crispy on both sides, about 3-4 minutes per side.

    Serve the fried polenta topped with the rosemary and honey-infused mushrooms.
