Prepare the Filling
In a skillet, melt 1 tablespoon of butter over medium heat. Add the Andouille sausage and sauté for about 3-4 minutes until browned. Add the crawfish tails and cook for an additional 2-3 minutes. Season with salt and black pepper. Remove from heat and set aside.

Make the Omelet
In a bowl, whisk together the eggs, a pinch of salt, and pepper. In a non-stick skillet, melt the remaining tablespoon of butter over medium heat. Pour in the egg mixture and cook until the edges start to set.

Add the Filling
Once the eggs are nearly set, add the crawfish and Andouille filling to one half of the omelet. Sprinkle the Fontina cheese and chopped green onions on top of the filling.

Fold and Serve
Carefully fold the omelet in half over the filling and let it cook for another 1-2 minutes until the cheese melts. Slide the omelet onto a plate and serve warm.
