Prepare the Baking Pan
Preheat your oven to 180°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.

Melt the Chocolate and Butter
In a heatproof bowl, combine the Belcolade dark chocolate and unsalted butter. Melt them together over a simmering pot of water (double boiler) or in the microwave in short bursts. Stir until smooth and well combined.

Mix the Batter
Remove the bowl from the heat and let it cool slightly. Stir in the granulated sugar until fully incorporated. Add the eggs one at a time, mixing well after each addition. Then, add the cocoa powder, vanilla extract, and a pinch of salt. Mix until the batter is smooth and glossy.

Bake the Torte
Pour the batter into the prepared cake pan. Bake for 25-30 minutes or until the edges are set and the center is slightly soft. A toothpick inserted should come out with moist crumbs.

Cool and Serve
Allow the torte to cool in the pan for 10 minutes before inverting onto a wire rack. Let it cool completely. Serve as is or with chocolate ganache and white/dark chocolate sauces.
