    Prepare and Cook the Duck

    Season the duck legs with salt and black pepper. In a large pot, submerge the duck legs in duck fat and cook on low heat for about 2-3 hours until the meat is tender and falls off the bone.

    Caramelize the Onions

    In a skillet, heat the olive oil over medium heat. Slice the onions and add them to the skillet. Cook slowly, stirring occasionally, until they are golden and caramelized, about 20-25 minutes.

    Assemble the Dish

    Once the duck is cooked, remove it from the fat and shred the meat. On a serving plate, layer the shredded duck, caramelized onions, slices of Brie and Fontina cheese, and a handful of arugula. Top with cherry marmalade.

    Serve the Duck Confit & Brie warm, garnished with additional arugula if desired.
