Prepare the Pork Chops
Preheat the oven to 400°F (200°C). Season the pork chops with olive oil, salt, black pepper, and rosemary.

Sear the Pork Chops
In an oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side until they are browned.

Bake the Pork Chops
Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the internal temperature reaches 145°F (63°C). Let rest before serving.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until creamy and smooth.

Roast the Vegetables
Spread the vegetables on a baking sheet and roast in the oven alongside the pork chops for about 10-15 minutes until tender.

In a small saucepan, combine heavy cream and mostarda over medium heat. Stir until warmed through and season with salt and pepper to taste.
