Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine the chocolate graham cracker crumbs, melted butter, and sugar. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan.

Bake the crust in the preheated oven for 8-10 minutes, until set. Remove from the oven and let cool while you prepare the filling.

In a large mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar and beat until well combined. Mix in the melted dark chocolate, cooled espresso, and vanilla extract until smooth.

Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Pour the filling over the cooled crust. Bake in the oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
