Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Heat the Pan
In a non-stick skillet, heat 1 tablespoon of butter over medium heat until melted.

Cook the Crawfish
Add the crawfish tails and green onions to the skillet and sauté for about 2-3 minutes until heated through.

Add Mozzarella
Sprinkle the shredded mozzarella cheese over the top of the egg mixture.

Cook the Omelet
Cook for about 4-5 minutes, or until the edges begin to set. Use a spatula to gently lift the edges and allow uncooked egg to flow underneath.

Fold and Serve
Once the omelet is mostly set, carefully fold it in half and let it cook for another minute. Slide the omelet onto a plate and serve hot.
