Make the Stuffing
In a medium bowl, combine crawfish tails, cream cheese, green onions, garlic, Old Bay seasoning, paprika, lemon juice, salt, black pepper, and beaten egg. Mix well until fully combined.

Prepare the Catfish
Preheat your oven to 375°F (190°C). Place catfish fillets on a clean surface and season both sides with salt and black pepper.

Stuff the Catfish
Take a portion of the crawfish stuffing and place it on one side of each catfish fillet. Fold the fillet over to encase the stuffing. Secure with toothpicks if necessary.

Coat and Bake
Roll the stuffed catfish in bread crumbs until well-coated. Place on a baking sheet and bake in the preheated oven for about 25-30 minutes or until golden brown and cooked through.
