Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.

Add Sausage and Peppers
Stir in the andouille sausage and green bell pepper. Cook for another 5 minutes until the sausage is browned.

Cook the Mushrooms
Add the sliced mushrooms and cook for an additional 3 minutes until they soften.

Add Rice
Stir in the Arborio rice, allowing it to toast for about 2 minutes, stirring constantly.

Add Broth Gradually
Begin adding the chicken broth one cup at a time, stirring frequently. Allow each cup to be absorbed before adding the next. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Add Crawfish
Once the rice is cooked, stir in the crawfish tails, grated Parmesan cheese, and season with salt and black pepper to taste. Cook for an additional 2-3 minutes until the crawfish is heated through.

Remove from heat and garnish with fresh chopped parsley. Serve hot.
