Prepare the Beurre Blanc
In a small saucepan, melt 1 tablespoon of butter over medium heat. Add the diced tomatoes and cook until softened, about 3-4 minutes. Stir in the chopped tarragon and cook for an additional minute. Remove from heat and set aside.

Prepare the Omelet
In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined. Heat the remaining tablespoon of butter in a non-stick skillet over medium heat. Pour the egg mixture into the skillet.

Add Crabmeat
As the eggs start to set, gently fold in the crabmeat and the prepared tomato-tarragon mixture evenly over one half of the omelet.

Fold and Serve
Once the eggs are mostly set but still slightly runny, fold the omelet in half and let it cook for another minute. Carefully slide it onto a plate and serve immediately.
