Cooking Instructions
- 1
Prepare the Broth
In a saucepan, bring the chicken or vegetable broth to a gentle simmer. Keep it warm on low heat.
- 2
Sauté the Aromatics
In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
- 3
Toast the Rice
Add the Arborio rice to the skillet and stir for about 2 minutes until the rice is lightly toasted and coated with the oil.
- 4
Add Broth Gradually
Pour in 1 cup of the warm broth and stir until it is mostly absorbed. Continue adding the broth, 1 cup at a time, stirring frequently, allowing each addition to be absorbed before adding the next.
- 5
Cook the Asparagus
After about 15 minutes of cooking the rice, add the asparagus pieces to the risotto. Continue stirring and adding broth until the rice is creamy and al dente, about 20 minutes total cooking time.
- 6
Incorporate Crabmeat and Cheese
Once the risotto is creamy and the rice is cooked, gently fold in the crabmeat, remaining butter, and grated Parmesan cheese. Stir until well combined and heated through.
- 7
Season and Serve
Season with salt and black pepper to taste. Serve hot, garnished with chopped parsley.
