    Prepare the Crab Mixture

    In a mixing bowl, gently combine the lump crab meat, mayonnaise, Dijon mustard, breadcrumbs, chopped parsley, Old Bay seasoning, salt, and black pepper. Mix until just combined, being careful not to break up the crab meat too much.

    Prepare the Cobia

    Preheat your oven to 375°F (190°C). Season the cobia fillets with salt and pepper on both sides. Place the fillets on a baking sheet lined with parchment paper.

    Crust the Cobia

    Spoon the crab mixture evenly over the top of each cobia fillet, pressing lightly to adhere the crust.

    Bake the Cobia

    Bake in the preheated oven for 15-20 minutes, or until the crab crust is golden brown and the cobia is cooked through (internal temperature should reach 145°F or 63°C).

    Serve

    Remove from oven, let cool for a few minutes, then serve immediately with lemon wedges on the side.
