Prepare the Crab Mixture
In a mixing bowl, combine the lump crab meat, bread crumbs, mayonnaise, Dijon mustard, chopped parsley, lemon juice, Old Bay seasoning, salt, and black pepper. Gently mix until well combined, being careful not to break up the crab meat too much.

Prepare the Pompano
Preheat your oven to 375°F (190°C). Rinse the pompano fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Assemble
Place the seasoned pompano fillets on a greased baking sheet. Evenly distribute the crab mixture over the top of each fillet, pressing down gently to adhere.

Bake in the preheated oven for 15-20 minutes or until the fish is cooked through and the crab crust is golden brown.
