Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare the Crab Mixture
In a mixing bowl, combine the lump crab meat, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and chopped parsley. Gently mix until well combined, being careful not to break up the crab meat too much.

Prepare the Cobia
Season the cobia fillets with salt and black pepper on both sides. Place them on the prepared baking sheet.

Add the Crab Topping
Spoon the crab mixture generously over the top of each cobia fillet, spreading it evenly.

Add Panko Topping
Sprinkle the panko breadcrumbs over the crab mixture, and drizzle with olive oil for added crunch.

Bake the Fish
Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the topping is golden brown.
