Prepare the Cobia
Preheat the oven to 375°F (190°C). Season the cobia fillets with salt and black pepper on both sides, and place them in a greased baking dish.

Make the Crab Mixture
In a mixing bowl, combine the crab meat, breadcrumbs, Parmesan cheese, mayonnaise, Dijon mustard, lemon juice, and a pinch of salt and pepper. Mix until well combined.

Crust the Cobia
Spread the crab mixture evenly over each cobia fillet, pressing it down lightly to adhere.

Bake the Cobia
Drizzle olive oil over the crusted fillets and bake in the preheated oven for 15-20 minutes or until the fish is cooked through and the crust is golden brown.

Serve
Serve the crab crusted cobia with roasted red potatoes, sautéed leeks, and corn on the side, drizzled with horseradish beurre blanc.
