Prepare the Broth
In a saucepan, heat the vegetable broth. Once warmed, add the saffron threads and let them steep while you prepare the risotto.

Sauté the Vegetables
In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

Cook the Rice
Add the Arborio rice to the skillet, stirring to coat the grains with the oil. Toast the rice for about 2-3 minutes until it becomes slightly translucent.

Add Broth Gradually
Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Incorporate the Vegetables and Mussels
When the rice is almost done, stir in the corn, black beans, chanterelle mushrooms, and red bell pepper. Add the cleaned mussels, cover the pot, and let them steam for about 5 minutes or until they open.

Season and Serve
Season the risotto with salt and black pepper to taste. Remove from heat, garnish with fresh parsley, and serve immediately.
