Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed Oreos and melted butter until well blended. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add in sour cream and vanilla extract, mixing until well combined. Add eggs one at a time, mixing on low speed until just blended.

Combine and Bake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill the Cheesecake
After cooling, remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight to set completely.

Prepare the Topping
In a mixing bowl, whip heavy cream and powdered sugar until stiff peaks form. Spread this mixture over the top of the chilled cheesecake.

Crush additional Oreos and sprinkle them over the whipped cream topping. Slice the cheesecake and serve cold.
