Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let it cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese and sugar together until smooth. Add the sour cream and vanilla extract, mixing until well combined. Add eggs one at a time, mixing just until incorporated. Gently fold in the rainbow sprinkles.

Combine and bake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

Chill and serve
Remove the cheesecake from the oven and allow it to cool completely at room temperature. Refrigerate for at least 4 hours, preferably overnight. Once chilled, carefully remove the sides of the springform pan and slice to serve.
