    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter. Mix until well combined.

    Form the Crust

    Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and set aside to cool.

    Make the Cheesecake Filling

    In a large bowl, beat the softened cream cheese until smooth. Add 1 cup of granulated sugar, sour cream, and vanilla extract. Mix until combined.

    Add Eggs

    Add the eggs one at a time, mixing well after each addition. Be careful not to overmix.

    Add Sprinkles

    Gently fold in the rainbow sprinkles until evenly distributed.

    Bake the Cheesecake

    Pour the cheesecake filling into the cooled crust. Bake in the preheated oven for about 50-60 minutes, or until the center is set and the edges are slightly puffed.

    Cool and Chill

    Turn off the oven and leave the cheesecake inside for 1 hour. Then remove it and let it cool to room temperature. Once cool, refrigerate for at least 4 hours or overnight.
