    Prepare the Coffee Mixture

    In a small saucepan over low heat, combine the whole milk, heavy cream, and granulated sugar. Stir until the sugar is dissolved.

    Incorporate Coffee

    Add the instant coffee granules to the warm milk mixture, stirring until fully dissolved.

    Mix Egg Yolks

    In a medium bowl, whisk together the egg yolks and a pinch of salt until they are pale and creamy.

    Temper the Egg Yolks

    Slowly pour about half of the warm milk mixture into the egg yolks, whisking constantly to prevent the eggs from scrambling.

    Combine Mixtures

    Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

    Add Vanilla

    Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature.

    Once cooled, cover the mixture and refrigerate for at least 4 hours or overnight.
