Preheat your oven to 375°F (190°C).

Rinse the cobia fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat. Sear the cobia fillets for about 2-3 minutes on each side until they are golden brown. Remove from heat and set aside.
Crab Mixture

In a mixing bowl, combine the lump crab meat, breadcrumbs, mayonnaise, Dijon mustard, Old Bay seasoning, lemon juice, and chopped parsley. Mix gently to combine, being careful not to break up the crab meat too much.
Assembly and Baking

Place the seared cobia fillets on a baking sheet lined with parchment paper. Divide the crab mixture evenly over each fillet, pressing it down gently to adhere.

Bake in the preheated oven for about 15-20 minutes, or until the crab crust is golden brown and the cobia is cooked through.

Remove from the oven and let it rest for a few minutes before serving.
