Prepare the Croutons
Preheat the oven to 375°F (190°C). Cut the focaccia bread into small cubes. In a bowl, toss the bread cubes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and bake for 10-15 minutes or until golden brown.

Make the Dressing
In a small bowl, whisk together lemon juice, Dijon mustard, Worcestershire sauce, and anchovy paste (if using). Slowly add olive oil while whisking to emulsify the dressing. Season with salt and black pepper to taste.

Assemble the Salad
Wash and chop the romaine lettuce into bite-sized pieces. In a large bowl, combine the romaine and croutons. Drizzle the dressing over the salad and toss well to coat. Top with grated Parmesan cheese.

Serve immediately, garnishing with additional Parmesan cheese and freshly cracked black pepper if desired.
