    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the mixture is warm and the sugar has completely dissolved.

    Add Cinnamon

    Stir in the cinnamon and pinch of salt. Allow the mixture to simmer on low heat for about 5 minutes, stirring occasionally.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks and vanilla extract until smooth.

    Combine Mixtures

    Gradually pour the warm milk mixture into the egg yolks, whisking continuously to temper the eggs. Once combined, return the mixture to the saucepan.

    Thicken the Gelato Base

    Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10-15 minutes). Do not let it boil.

    Chill the Mixture

    Remove the saucepan from heat and transfer the mixture to a bowl. Cover with plastic wrap and refrigerate for at least 4 hours or until completely chilled.

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Transfer the gelato to an airtight container and freeze for at least 2 hours until firm.
