Cilantro Lime Risotto

    Prepare the broth

    In a saucepan, heat the chicken broth over medium heat and keep it warm.

    Sauté onion and garlic

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in minced garlic and cook for an additional minute.

    Cook the rice

    Add the Arborio rice to the skillet and stir for 2-3 minutes until the rice is lightly toasted.

    Add broth gradually

    Begin adding the warm chicken broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more broth.

    Finish the risotto

    Once the rice is creamy and al dente (about 18-20 minutes), stir in lime juice, chopped cilantro, salt, pepper, and Parmesan cheese.

Coconut Shrimp

    Prepare the shrimp

    In a bowl, combine flour, salt, and pepper. In another bowl, have the beaten egg ready. Place the coconut flakes in a third bowl.

    Coat the shrimp

    Dip each shrimp first in the flour mixture, then in the egg, and finally coat with coconut flakes.

    Fry the shrimp

    In a large pan, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown, about 2-3 minutes on each side. Drain on paper towels.

Lemon Pepper Scallops

    Season the scallops

    Pat the scallops dry and season with salt, black pepper, lemon zest, and lemon juice.

    Sear the scallops

    In a skillet, heat olive oil and butter over medium-high heat. Sear the scallops for 2-3 minutes on each side until golden brown and cooked through.
