Prepare the Chocolate Mixture
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar is dissolved, stirring occasionally.

Add Cocoa and Chocolate
Once the mixture is hot, whisk in the cocoa powder until fully dissolved. Then add the chopped semisweet chocolate and continue to stir until melted and smooth.

Cool the Mixture
Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt. Let the mixture cool to room temperature.

Chill the Mixture
Once cooled, cover the saucepan and refrigerate for at least 2 hours or overnight to chill thoroughly.

Churn the Gelato
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes.

Freeze and Serve
