Preparation and Assembly
- 1
Make the Crust
In a medium bowl, combine chopped pecans, graham cracker crumbs, and melted butter. Mix until well combined.
- 2
Form the Base
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Set aside.
- 3
Prepare the Filling
In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
- 4
Whip the Cream
In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
- 5
Layer the Bananas
Arrange the sliced bananas over the crust in the springform pan, then pour the cream cheese filling over the bananas, smoothing it out evenly.
- 6
Chill the Cheesecake
Refrigerate the cheesecake for at least 4 hours or overnight to set.
- 7
Chocolate Coating
Before serving, melt chocolate (dark or milk chocolate) in a microwave or double boiler. Dip the cheesecake slices in the melted chocolate and let them cool on parchment paper until the chocolate hardens.
