Method
Preparation

- 2
Prepare the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add vanilla extract and mix until combined. Add eggs one at a time, mixing well after each addition.
- 3
Add Bananas
Mash the bananas and fold them into the cheesecake mixture until evenly combined.
- 4
Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour. Then remove it and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
- 5
Prepare the Chocolate Topping
Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Once the cheesecake is chilled, pour the melted chocolate over the top, spreading it evenly.
- 6
Macerate the Strawberries
In a bowl, combine sliced strawberries, brown sugar, and lemon juice. Let them sit for at least 30 minutes to macerate.
- 7
Serve
Slice the cheesecake and serve with macerated strawberries on the side.
