Prepare the Broth
In a saucepan, heat the chicken broth over low heat and keep it warm.

Sauté the Vegetables and Sausage
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sliced Andouille sausage, cooking for an additional 2-3 minutes.

Add Chicken and Mushrooms
Stir in the diced chicken and sliced mushrooms. Cook until the chicken is no longer pink, about 5-7 minutes.

Incorporate the Rice
Add the Arborio rice to the skillet and stir for 1-2 minutes, allowing the rice to absorb the flavors.

Add Broth Gradually
Begin adding the warm chicken broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Stir in Tomatoes and Season
Once the rice is cooked, gently fold in the diced tomatoes and grated Parmesan cheese. Season with salt and black pepper to taste.

Remove from heat and garnish with fresh parsley before serving.
