Brown the Meats
Add the sliced Andouille sausage to the pot and cook until browned, about 5-7 minutes. Then, add the chicken thighs and cook until slightly browned on the outside.

Add the Flavor
Stir in the minced garlic, Cajun seasoning, diced tomatoes, bay leaves, and sliced okra. Mix well and cook for another 2-3 minutes.

Simmer the Gumbo
Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.

Season and Serve
Remove the bay leaves. Shred the chicken into bite-sized pieces and stir back into the gumbo. Season with salt and black pepper to taste. Serve hot over cooked rice and garnish with sliced green onions.
