Prepare Cauliflower
Preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil and add the cauliflower florets. Cook for about 5 minutes until slightly tender, then drain and set aside.

Make Cheese Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk and bring to a simmer. Cook until thickened, about 3-4 minutes. Stir in the mustard powder, garlic powder, salt, and pepper. Remove from heat and add 1.5 cups of shredded cheddar cheese, stirring until melted.

Combine and Bake
In a mixing bowl, combine the cooked cauliflower florets with the cheese sauce. Pour the mixture into a baking dish and sprinkle the remaining 0.5 cups of cheddar cheese and breadcrumbs on top. Bake in the preheated oven for 20-25 minutes, or until bubbly and golden brown.

Remove from the oven, let cool slightly, then serve warm.
