Cook the Cauliflower
Add the chopped cauliflower to the pot and stir. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 15 minutes, or until the cauliflower is tender.

Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be cautious with the hot liquid.

Stir in the heavy cream, salt, black pepper, and nutmeg. Heat through for another 5 minutes, but do not boil.
