Prepare the Broth
In a saucepan, heat the vegetable or chicken broth over low heat. Keep it warm but not boiling.

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.

Cook the Rice
Add the Arborio rice to the skillet, stirring for about 2 minutes until the rice is slightly translucent. Pour in the fire roasted heirloom tomatoes and mix well.

Add Broth Gradually
Begin adding the warm broth, one ladle at a time, stirring continuously. Allow the rice to absorb the liquid before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Incorporate Vegetables and Crabmeat
Stir in the diced carrots and peas, cooking for an additional 5 minutes. Gently fold in the crabmeat, being careful not to break it apart too much.

Finish with Cheese and Seasoning
Remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste. Garnish with fresh parsley before serving.
