1. Prepare the crust
Preheat the oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden. Remove from oven and cool.
2. Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar, vanilla extract, and sour cream. Beat until combined. Add the eggs one at a time, mixing on low speed until just blended. Be careful not to overmix.
3. Add caramel
Pour half of the cheesecake filling into the cooled crust. Drizzle half of the caramel sauce on top. Pour the remaining cheesecake filling and top with the remaining caramel sauce. Use a knife to swirl the caramel into the cheesecake slightly.
4. Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly ajar.
5. Chill and serve
After cooling, refrigerate the cheesecake for at least 4 hours, or overnight. Before serving, drizzle additional caramel sauce on top if desired.
