Making the Gelato

Prepare the Base
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Do not let it boil.

Mix in Buttermilk
Remove the saucepan from heat and let it cool slightly. Stir in the buttermilk, vanilla extract, and a pinch of salt until well combined.

Chill the Mixture
Cover the mixture and refrigerate for at least 2 hours, or until completely chilled.

Churn the Gelato
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours, or until firm.

Serve
Scoop the gelato into bowls or cones and enjoy!
