Bruleed Figs and Sauce

Preparation and Serving

Prepare the Figs
Preheat your broiler. Cut the figs in half and place them cut side up on a baking sheet. Sprinkle brown sugar evenly over the tops of the figs.

Brulee the Figs
Place the baking sheet under the broiler and broil for 2-3 minutes, or until the sugar is caramelized and bubbly. Keep an eye on them to prevent burning.

Make the Serrano Honey Balsamic Sauce
In a small saucepan, combine honey, chopped Serrano pepper, and balsamic vinegar. Heat over medium heat until bubbly. Remove from heat and let it cool slightly.

Serve
Place 2 bruleed fig halves on each plate. Add a scoop of vanilla bean ice cream alongside the figs. Drizzle the Serrano honey balsamic sauce over the figs and ice cream. Serve immediately.
