Cook the Bacon
In the same griddle, cook the bacon slices until crispy. Remove and place on paper towels to drain excess fat.

Make the Smash Patties
Divide the ground beef into 2 equal portions (3 oz each). Form loosely into balls. Place on the griddle and smash down with a spatula to create thin patties. Season with salt and pepper. Cook for about 3-4 minutes on one side.

Flip the Patties
Flip the patties and top each with sautéed onions and a slice of bacon. Continue cooking for another 2-3 minutes until desired doneness.

Assemble the Burger
On the bottom half of each pretzel bun, place a smash patty with bacon and onions, followed by a generous drizzle of beer cheese sauce, a fried egg, and crispy fried onions. Drizzle with hot sauce and top with the other half of the bun.
