    Prepare the Rabbit

    Season the rabbit pieces with salt and black pepper. Heat olive oil in a large pot over medium-high heat and sear the rabbit on all sides until browned. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the sliced onions and cook until caramelized, about 10 minutes. Add the minced garlic and shiitake mushrooms, and cook for another 5 minutes.

    Deglaze and Braise

    Pour in the white wine to deglaze the pot, scraping up any brown bits. Add the chicken broth and thyme, then return the rabbit to the pot. Bring to a simmer, cover, and let it braise for about 1.5 hours.

    Finish with Tomatoes

    After 1.5 hours, add the halved cherry tomatoes to the pot and cook for an additional 15 minutes.

    Prepare the Tagliatelle

    While the rabbit is braising, make the house-made tagliatelle by mixing flour and eggs to form a dough, rolling it out, and cutting it into strips. Cook in salted boiling water for about 3-4 minutes.

    Serve

    Plate the tagliatelle and top with the braised rabbit, mushrooms, onions, and cherry tomatoes. Garnish with fresh thyme if desired.
