While the potatoes are roasting, season the ribeye steaks with salt and pepper. Heat a skillet over medium-high heat with a little olive oil and sear the steaks for about 4-5 minutes on each side for medium-rare.
3. Make the Crab and Bleu Cheese Topping
In a bowl, mix the crab meat with crumbled bleu cheese and a pinch of salt and pepper. Once the steaks are seared, top each steak with the crab and bleu cheese mixture.
4. Finish Cooking the Steaks
Transfer the steaks to the oven (still at 400°F) and cook for an additional 5-7 minutes until the cheese is melted and bubbly.
