Creamy Polenta

Blackened Redfish

    Prepare the Fish

    Preheat a cast-iron skillet over high heat until smoking. Rub the redfish fillets with olive oil and coat them generously with blackening seasoning on both sides.

    Cook the Fish

    Place the fillets in the hot skillet and cook for about 3-4 minutes on each side until blackened and cooked through. Remove from heat and set aside.

Shrimp Creole Sauce

    Sauté Vegetables

    In a large saucepan, heat olive oil over medium heat. Add onion, bell pepper, and celery. Sauté until softened, about 5-7 minutes.

    Add Garlic and Tomatoes

    Add minced garlic and cook for another minute. Stir in diced tomatoes, chicken broth, and creole seasoning. Bring to a simmer.

    Cook the Shrimp

    Add shrimp to the sauce and cook until pink and opaque, about 3-5 minutes. Season with salt and black pepper to taste. Remove from heat.

Creamy Polenta

    Cook the Polenta

    In a saucepan, bring water to a boil. Gradually whisk in the polenta, stirring constantly to prevent lumps. Reduce heat and cook for about 20 minutes, stirring frequently.

    Finish the Polenta

    Once the polenta is thick and creamy, stir in butter, Parmesan cheese, and salt to taste. Keep warm.

Green Beans

    Sauté the Green Beans

    In a skillet, heat olive oil over medium heat. Add green beans and minced garlic. Sauté until the beans are bright green and tender, about 5-7 minutes. Season with salt to taste.
