Prepare the Chicken
Rub the chicken breasts with blackening seasoning on both sides. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the chicken for about 5-7 minutes on each side, or until cooked through and blackened. Remove from heat, let rest, and then slice.

Cook the Sausage
In the same skillet, add the andouille sausage and cook over medium heat until browned. Remove and set aside.

Sauté Vegetables
In the same skillet, add another tablespoon of olive oil if needed. Sauté the diced onion, green bell pepper, and red bell pepper until softened, about 5 minutes.

Prepare Risotto
Add the arborio rice to the skillet with the vegetables and stir for 1-2 minutes until the rice is coated. Gradually add the chicken broth, one cup at a time, stirring frequently until absorbed before adding more.

Add Remaining Ingredients
Once the rice is creamy and tender (about 18-20 minutes), stir in the corn, sun-dried tomatoes, sliced chicken, and sausage. Cook until heated through.

Finish and Serve
Season with salt and pepper to taste. If desired, stir in parmesan cheese before serving. Enjoy your blackened chicken risotto!
