Prepare the Ingredients
Chop the bell peppers, yellow onion, and cherry tomatoes into bite-sized pieces. Rinse the catfish fillets and pat dry.

Season the Catfish
Rub the blackening seasoning evenly over both sides of each catfish fillet. Set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped yellow onion, red bell pepper, and green bell pepper. Sauté for about 5-7 minutes until tender.

Add Crawfish and Corn
Stir in the crawfish tails and corn kernels. Cook for an additional 3-4 minutes until heated through.

Cook the Catfish
Push the vegetable mixture to the side of the skillet. Increase the heat to medium-high and add the seasoned catfish fillets. Cook for about 4-5 minutes on each side until blackened and cooked through.

Add the cherry tomatoes to the skillet and cook for another 2 minutes until they begin to soften.
