    Prepare the Beef

    Rub the shoulder tenderloin with a mix of spices (paprika, cayenne, garlic powder, onion powder, salt, and black pepper) to create a blackened crust. Let it sit for at least 30 minutes.

    Grill the Beef

    Preheat the grill to high heat. Grill the seasoned tenderloin for about 5-7 minutes on each side or until it reaches medium rare (internal temperature of 130-135°F). Remove from the grill and let it rest for 10 minutes before slicing.

    Charcoal the Onions

    While the beef is resting, slice the red onion into thick rounds. Brush with olive oil and grill them until charred and tender, about 3-4 minutes per side.

    Prepare the Salad

    In a large bowl, combine arugula, dried cherries, pine nuts, and halved grape tomatoes. Drizzle with balsamic vinaigrette and toss to coat.
