Cooking Directions
- 1
Prepare the Pasta
In a large pot, bring salted water to a boil. Cook the campanelle pasta according to package instructions until al dente. Drain and set aside.
- 2
Sear the Beef
While the pasta is cooking, season the beef shoulder tenderloin with salt and black pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef and sear for about 3-4 minutes on each side, or until browned. Remove from the skillet and let it rest.
- 3
Sauté the Vegetables
In the same skillet, add the remaining olive oil and sauté minced garlic until fragrant. Add the sliced portabella mushrooms and cook until they are tender, about 5 minutes. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
- 4
Combine Ingredients
Slice the rested beef tenderloin thinly. Add the cooked campanelle pasta, sliced beef, and fresh basil leaves to the skillet with the sautéed vegetables. Toss everything together to combine. Adjust seasoning with salt and black pepper as needed.
- 5
Serve
Plate the pasta mixture and sprinkle with grated Parmesan cheese before serving. Enjoy your Beef Shoulder Tenderloin Pasta Special!
