Cook the Beef
Add the diced beef sirloin to the skillet and cook until browned, about 5-7 minutes. Season with salt and black pepper.

Add the Mushrooms
Stir in the shiitake and portobello mushrooms, cooking for another 3-4 minutes until they start to soften.

Incorporate Rice
Add the Arborio rice to the skillet, stirring it into the mixture and allowing it to toast for 1-2 minutes.

Add Broth Gradually
Pour in the beef broth one cup at a time, stirring frequently, allowing each cup to be absorbed before adding the next. This process should take about 20-25 minutes.

Finish with Sun-Dried Tomatoes and Cheese
Once the rice is creamy and cooked al dente, stir in the chopped sun-dried tomatoes and grated Parmesan cheese. Adjust seasoning with salt and pepper to taste.

Remove from heat, garnish with fresh parsley, and serve hot.
