Cheesecake Preparation

Prepare the crust
Preheat your oven to 325°F (160°C). In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes, then remove and let cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add sour cream and vanilla extract, and mix until well incorporated. Add eggs one at a time, mixing on low speed until just combined.

Combine and bake
Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

Chill
Refrigerate the cheesecake for at least 4 hours or overnight to set completely.

Prepare toppings
Slice bananas and prepare strawberry topping and chocolate sauce to serve with the cheesecake.

Serve
Once chilled, slice the cheesecake and serve with banana slices, strawberry toppings, and drizzle with chocolate sauce.
