Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes, then remove from the oven and allow to cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and vanilla extract, mixing until well combined. Add the sour cream and mix again until smooth. Incorporate the mashed bananas into the mixture, ensuring they are evenly distributed.

Combine and Bake
Pour the cheesecake filling over the cooled crust and smooth the top. Bake in the preheated oven for 45-50 minutes or until the center is set but slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool gradually for about 1 hour.

Chill and Serve
Refrigerate the cheesecake for at least 4 hours, preferably overnight. Before serving, top with whipped cream, sliced bananas, chocolate sauce, and chopped nuts for a classic banana split finish.
