Gelato Preparation

Prepare the Base
In a medium saucepan, combine the milk, heavy cream, granulated sugar, salt, and vanilla extract. Heat the mixture over medium heat, stirring constantly until the sugar is dissolved and the mixture is heated but not boiling.

Chill the Mixture
Remove the saucepan from the heat and let the mixture cool to room temperature. Once cooled, cover and refrigerate for at least 2 hours or until thoroughly chilled.

Once the mixture is chilled, stir in the chopped Amerena cherries and cherry juice. Mix well to combine.

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
